We all know you can’t just eat one cookie, they are just too hard to resist. But don’t you hate the feeling after you consume an entire roll of Tollhouse cookies? We all wish that our favorite sweet foods were somehow good for us.
After doing a little research, I came across a recipe that will change the cookie game forever…
Chickpea chocolate chip cookies.…sounds gross huh?
Well, not only are these low calorie and gluten free, but they are simply delicious. You would never be able to tell that these cookies provide some major nutritional benefits.

Let’s get to baking! Here is what you will need (makes 16-18 cookies)…
1 – 15 oz can chickpeas (garbanzo beans) – should be 1 1/2 cups chickpeas.
1/2 cup natural peanut butter or any other nut butter. I prefer almond butter!
1/4 cup maple syrup (I used Grade B Pure Maple Syrup)
1 teaspoon baking powder
2 teaspoons vanilla
a pinch of salt
1/2 cup chocolate chips
STEPS (with pictures):
- Set the oven to pre-heat at 350 and line a baking sheet with parchment paper.
2. Rinse and drain 1 1/2 cups of chickpeas. If you want your batter extra smooth, remove the skin around the chickpeas.
- In a blender or food processor (I recommend a food processor if you have one), combine these ingredients: chickpeas, maple syrup, peanut or almond butter, baking powder, salt and vanilla. Blend ingredients until you get a smooth consistency.
4. Fold your chocolate chips into the batter or pulse them in. Make sure you don’t blend your chocolate chips into your batter…you will end up with tiny pieces that will change the batter.
5. Slightly dampen hands and roll the batter into equal sized balls (roughly the size of a ping pong ball)
- Place on your baking sheet. If you want flatter cookies, you can squish them down. If not, keep them as balls.
- Put your cookies in the oven for 10 minutes. Wait until they are light golden brown, but keep an eye on them because they can burn easily. You want them to be moist!
8. Take your cookies out and let them sit for 15 minutes to cool.
9. Now you are ready to serve, share, and eat!
